Basil Pesto
A recipe from sarahdall.co.zaI bought delicious pesto at the Cheese Festival yesterday and decided I could definitely make a competitive one!
Home-made basil pesto is so much better than store-bought. If you have a basil plant growing in your garden, it’s so worth making your own. Make a big batch in the blender and freeze small quantities.
Basil pesto
- 150g fresh basil leaves, stalks included
- 50g grated Parmesan
- 30g toasted pine nuts or almonds
- 2 cloves crushed garlic
- 100ml olive oil (or enough to make a paste)
Combine all the ingredients in a blender and blend. Make sure you don’t over-blend and form a purée. Add a little hot water if the paste is too thick. Season to taste and serve.
