Caprese Tart

- 1 x roll, ready roll puff pastry (I like the butter puff from WW)
- 100ml basil pesto
- 250g buffalo mozzarella
- 250g cherry tomatoes
- Olive oil for drizzling
- Sea salt and black pepper
Preheat the oven to 200°c.
Roll out the puff pastry and cut out circles using a cutter or glass. Place the pastry rounds onto a floured baking tray.
Brush the pastry with basil pesto and top with a few cherry tomatoes and torn mozzarella. Drizzle with olive oil and season with salt and pepper.
Bake for 10 – 15 minutes, or until the pastry is crisp and cooked through. Turn the oven down to 100°c if the pastry looks as if it is getting a little too dark.
