Dipped orange peel

Dark chocolate dipped orange peel

Makes 24

2 oranges
100g granulated sugar
50ml water
100g good quality dark chocolate

Preheat the oven to 80°C, and line 2 x baking sheets with baking paper.

To make the orange peel
Cut each orange into quarters and remove the peel from the orange segments. Ensure you have removed all the white pith from the orange peels. Slice the orange peel into matchstick size pieces. Boil the orange peel for 5 minutes, strain and pat dry with paper towel.

Make the sugar syrup
Place the sugar and water into a small pot over a medium heat. Stir continuously until all the sugar has dissolved and then bring to the boil. Boil for 5 minutes. Add the orange peel and simmer for 10 minutes. Remove the peel from the syrup using a slotted spoon and scatter it onto one of the prepared baking trays. Place in the oven to dry out for 1 hour.

Dipping the peel
Melt the chocolate in a glass bowl over simmering hot water; dip the candied peel into the melted chocolate and place on the other baking sheet to set.
