Parma Ham & Fig Pizza

Basic dough

  • 250g flour
  • 1tsp salt
  • 2tsp instant dried yeast
  • 200ml lukewarm water

Toppings

  • 110g tomato paste
  • 500g bocconcini mozzarella
  • 500g Parma ham
  • 200g figs
  • Handful of sage leaves
  • Maldon salt and black pepper

Place the dough ingredients into a bowl or mixer. Knead using the dough hook or your hands for 5 minutes, or until soft and pliable.

Cover and leave to prove in a warm place until doubled in size. Knock back and shape into 5 equal sized balls.

Preheat the oven to 180°C.

Roll out the dough on a floured surface, into any shape you desire. Spread the tomato paste over the dough, ensuring you cover the edges. Top with Parma ham, figs and torn pieces of bocconcini mozzarella. Cook the pizza for 8 – 10 minutes or until the mozzarella has melted and the pizza looks golden and crispy. Garnish with sage leaves and season to taste. Serve immediately.
