Who doesn’t love a good pizza?

The biggest challenge I find with pizza-making at home is that the pizzas are never quite as good. They simply don’t compare to one you can find in a pizzeria. For once in my life I could confidently say, perhaps this pizza could beat a Borruso’s pizza. A little time-consuming to make, but worth every bit of effort.

Pulled pork taco pizza

• 500g pizza dough
• 1/2 a can tomato passata (purée)
• 2 onions, caramelized
• 500g grated mozzarella, or fior de latte
• 250g baby spinach
• 300g shredded pulled pork
• 100g thinly sliced chorizo
• 200g sliced shiitake mushrooms
• 3 finely-sliced spring onions

Preheat the oven to 220°C.

Divide the dough into 4 balls and thinly roll out the bases. Place the bases onto a floured baking sheet. Leave to rest for 20 – 30 minutes.

Spread the entire base with tomato purée, scatter with caramelized onions and then an even layer of grated cheese. Do not overdo the cheese (the less cheese the crispier the end result is).

Evenly distribute the rest of the toppings onto the 4 bases, in the order they are listed. Season with salt and pepper. Place in the oven for 10 minutes, or until crispy and cooked through.

Serve immediately.
