Thai green curry paste

• 10 green chilies
• 6 cloves garlic
• 3 spring onions
• 2 lemon grass stalks
• small knob ginger
• handful of coriander leaves
• 5ml ground coriander seeds
• 5ml ground cumin
• 10ml shrimp paste
• 5ml salt
• 30 – 45ml canola oil

Place all the ingredients into a spice grinder, and blend until smooth. Store in an airtight container for up to 2 weeks in the fridge.
