Walnut & gorgonzola stuffing

Crispy red onion, walnut and Gorgonzola stuffing

Ingredients

• 2 red onions, thinly sliced
• 100g walnuts, roasted
• 150g Gorgonzola
• 2 slices of fresh soya linseed breadcrumbs
• 5g picked thyme leaves

Preheat the oven to 100°c. Place the onion onto a baking tray and place in the oven for 1 hour. Roughly chop the walnuts, and in a large bowl mix together the dried onions, walnuts, Gorgonzola, breadcrumbs and thyme. Season to taste and press together to form a ball. Keep aside until ready to stuff.
