Citrus and sage chicken

I went for lunch and came home with LEMONS, and lots of them indeed. I spent the rest of the week making lemonade, courgette and lemon curd cake, lemon and lime brullees and after so many sweet things we needed something savoury. So I made this and it’s a winner! Nothing like a meal in one dish.

Citrus and sage chicken

  • 1 whole chicken
  • 4 lemons, cut into chunks
  • 500g pickling onions, skin on and halved
  • 500g baby potatoes
  • 500g baby carrots with tops
  • 4 peeled garlic cloves
  •  1/4 cup thick soya sauce
  • 1/4 cup honey
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Salt and pepper
  • Fresh Sage leaves for garnish

Preheat the oven to 180°c. Place the chicken onto a roasting tray and arrange the lemons, onions, potatoes, carrots and garlic around it. Mix together the soya sauce, honey, olive oil and lemon juice, drizzle over the chicken and vegetables, ensuring the whole chicken has been covered with marinade. Season with salt and pepper.

Roast the for 1 hour and 15 minutes, or until the chicken is golden and cooked through. Remove from the oven and rest the chicken for 5 minutes, carve and place the chicken pieces amongst the vegetables. Garnish with fresh sage and serve immediately.
