Easter Biscuits

Ingredients
Biscuit dough
- 100g castor sugar
- 200g butter
- 30og cake flour
- pinch of salt
Royal icing
- 2 egg whites
- icing sugar
Preheat the oven to 150°C.
Mix together the butter and sugar and add the sifted flour and salt, to form a dough. Roll out the biscuit dough 1/2cm thick and cut out desired shapes using a cutter. Place on a greased baking tray and bake for 5 – 7 minutes or until lightly golden and cooked through.
Remove the biscuits from the oven and place on a cooling rack to cool. While the biscuits are cooling, make the icing. Beat the egg whites until stiff peak and slowly add the sifted icing sugar to form a thick glossy icing; make sure it is piping consistency.
Place the icing in a piping bag and pipe decorations as desired. Thin the icing with a little water, if you want a runnier icing.
