Kiwi and cucumber granita

Makes 500ml


• 6 kiwis, frozen
• ½ a cucumber
• Juice of 2 limes

Grate the cucumber and place in a strainer; strain the cucumber retaining the liquid. Peel the kiwis and halve. Place the kiwis, cucumber juice and lime juice into a blender and blend until smooth, strain and pour into a 2l ice cream container. Freeze the mixture, using a fork break down the ice crystals to form a granita. Repeat this process twice whilst freezing.

Adult spike Add 10ml of vodka to the mixture before blending.
