Lamb Ragu

As per request, I have posted one of my specialities. I love this ragu and you can do so much more with it than just spag bol!

Lamb Ragu

Serves 8

  • 1 onion, finely chopped
  • 5ml crushed garlic
  • pinch of salt
  • 500g lamb mince
  • 4 grated carrots
  • 2 tins chopped tomatoes
  • 55g tomato paste
  • 1 cup rosé (can substitute with red wine)
  • 50ml chutney
  • a handful of chopped thyme, parsley, origanum and basil

Fry the onions, garlic and salt until soft and translucent. Add the lamb mince and brown. Mix in the carrots, chopped tomatoes, tomato paste, rosé, chutney and herbs.

Reduce the heat and gently simmer for 2 hours, until the ragu has thickened and is full of flavour. Season to taste accordingly.

Serve with cooked pasta and parmesan shavings.
