Peanut butter & Salted caramel

Peanut butter and salted caramel filled muffins

Makes 12
Easy: 45 minutes

Salted caramel
• 50ml golden syrup
• 40g butter
• 40g Demerara sugar
• 50g castor sugar
• 60ml cream
• 7.5ml Maldon salt flakes

Muffin Mix
• 280g cake flour
• 80g castor sugar
• 2 Tsp. (10ml) baking powder
• A pinch of salt
• 100ml crunchy peanut butter
• 1 cup (250ml) milk
• 1 egg, beaten
• 50g melted butter
• 50g salted peanuts, roughly chopped

To make the salted caramel…
Heat the syrup, butter and sugars together in a small saucepan and bring to the boil. Remove from the heat and stir in the cream and salt. Return to the heat and simmer for 2 – 3 minutes. Pour into a metal bowl and set aside to cool.

To make the muffins…
Preheat oven to 180°c and grease a standard muffin tray.

Mix together the flour, sugar, baking powder, and salt in a large mixing bowl. Add the peanut butter and mix well. Stir in the milk, egg, and butter. Sprinkle over chopped nuts and bake for 15 to 20 minutes or until light golden brown. Cool on a wire rack.

Make an incision in the top of each muffin and fill the centers with salted caramel.
